Green Chili Chicken

This is one I've gotten to love, its easy and simple to put together and taste great, 5 min for prep and 20 minutes to cook.

4 Boneless skinless chicken breast(cut into bite size pieces)
2 Tablespoons of butter or margarine
1 Medium onion (chopped)
2 Garlic cloves (minced)
1 Can green chillies (minced)
1 Can cream of chicken soup
1(8 ounce) pkg sour cream
1(8 ounce) pkg shredded chedder cheese
salt & pepper (to taste)
noodles or rice (noodles are better)

Melt butter in a large skillet over medium heat, add onion and garlic and saut'e until onions are transparent.

Add chicken, salt & pepper and cook until chicken is done(about 10 minutes)

Add soup, sour cream and green chillies - stirring until smooth
Stir in cheese and cook until cheese is melted ( about 6 minutes) mixing well

Serve over noodles/rice

Add a green salad and rolls to complete the meal.

Quick way to cook frozen cauliflower and broccoli mix

1. Place the frozen veggie mix in your microwaveable dish.

2. add 2 - 3 tablespoons of tostitos con queso salsa (cheese) and stir mixture.

3. cook in microwave for approximately 3- 4 minutes or until the veggies are tender.

I really appreciate you guys....the websites, along with your ideas have truly helped me out.

I have some work to do in my kitchen now. :D

uhhhh, shrimp stew...

sautee onions, celery, peppers (finely chopped) in butter until clear.

stir in a little flou to make the roux... keep stiring on a medium to low fire until close to the color of peanut butter... add your favorite dry seasoning... like Tony Chacheres.. add some water... and add shrimp.....

switch up and put crawfish tails...

If you want etouffee add tomato sauce and mushroom soup....

don't ask me measurements... I just put it in the pot...

Kema,

You're like me....I don't measure anything either, I just throw it in there and it always comes out just right. :D

Thanx for the recipes.

Why not spice up that same ol' alfredo and use seafood (crab meat and shrimp) instead of chicken. I've tried that and it's really good!!

Sounds good BP.

I just got a recipe for some good ole "Stuffed Bell Peppers". I'll be trying this one out next week. I've been finding some really good ones online.

Thanx gang.
